- 1 cup crème fraîche
- 2 Tbs. chopped chives
- 20 thin slices whole wheat bread, crusts removed
- 1 lb. smoked salmon, thinly sliced
Smoked Salmon Tea Sandwiches

Combine the crème fraîche and the chives and spread on the slices of bread. Put the sliced smoked salmon on half of the bread slices and cover with another slice. Cut into interesting shapes.
The cookbook advises cutting four 1½-inch rounds from each sandwich. You can do that, although it wastes some of each sandwich, or you can cut it into squares, triangles, rectangles, whatever you like.
