The name is very misleading-- not the healthy rice, and not named for the source

Active Time: 5 minutes
Start to Finish: 1 hour


  • 1 small onion, diced
  • 2 14 oz. cans Campbell beef consommé, undiluted
  • 1 cup uncooked white rice
  • ½ cup (1 stick) butter, melted


Preheat oven to 350°F.

Mix all ingredients together in a 1 or 1 1/2 qt casserole dish and bake, covered, for one hour.


You can use less butter to reduce fat and calories. This dish is extremely simple but very tasty!

Salted or Unsalted?Salted or Unsalted?
We always cook with unsalted butter. Salted butter is usually less fresh than unsalted, and the salt can be used to mask inferior flavors. Also, manufacturers add different amounts of salt to their butter, so it is difficult to control the amount of salt in your recipe. In a pinch, you can use salted butter in a savory recipe, but we would not recommend using it for baking.
