- 3 bell peppers, various colors
- 3 Tbsp extra virgin olive oil
- 1 Tbsp Italian seasoning
- 1 tsp kosher salt

Preheat the grill.
Cut peppers into long strips. Add to grill pan or aluminum foil roasting pan with olive oil, salt, pepper and Italian seasoning and mix well.
Let peppers cook for about 5 minutes with the grill lid closed. Add the sausage directly on the grill, with a few holes poked in each one. Stir the peppers every few minutes. Grill the sausage until it is cooked through. Take the sausage off the grill and cut into diagonal pieces (about 5 per sausage). Add the pieces to the peppers and stir. Continue to cook until the peppers are soft.
Serve on hoagie rolls or slider rolls, sliced (not all the way through).
Notes
You can also add red or yellow onions, which should be cut into strips that are the same size as the pepper strips.
Try adding different seasoning to change the flavor!
You can cut the peppers earlier in the day and store in the refrigerator until you are ready to grill.
